Paula Deen's Competition: Gran Mazie's Shredded Sweet Potatoes

                            Shred 2 cups of sweet potatoes. This is two sweet potatoes.
 It calls for a stick of butter. Mazie's signature ingredient. Throw it in the casserole dish and let it melt in the oven while it is preheating (set for 350 degrees).
 Beat 2 eggs well.
 Pour in 3/4 cup of milk.
 Pour in the eggs. Mix in 1/2 teaspoon of All Spice, 1 Tspn of cinnamon, 1/4 tspn ground cloves, 1/2 cup of sugar and a dash of salt. After it is mixed dump and spread into the casserole dish. Bake for an hour. When Half done, stir. Do NOT cover.
Up until I was married, I had spent every Thanksgiving at Gran Charlie's and Gran Mazie's in Greensboro, NC. The spread was amazing, but what every grandchild there devoured was Mazie's not so pretty yet devine in taste shredded sweet potato casserole. Yum.
I will never forget being 16, going to a friends house to help her cook for her thanksgiving feast. We were both excited about preparing the sweet potato casserole. I was in for a surprise when I found out her recipe was bright orange and topped with marsh mellows. I just couldn't believe it.And then it tasted so mediocre compared to Mazie's. Now, don't get me wrong. I now love the traditional sweet potato casserole. Particularly Mimi's recipe topped with pecans (I think Matt makes this one?). But today is about Mazie's down south shredded sweet potatoes, so pull out your grater and get to work!

Gran Mazie's Sweet Potatoes
2 cups grated sweet potato
2 well beaten eggs
3/4 cup of milk
1 Stick of melted butter
1 tspn cinnamon
1/2 tspn All Spice
1/4 Ground Cloves
1/2 Cup Sugar
dash of salt

Preheat oven at 350 degrees. Place butter in casserole dish and allow to melt in oven while it is preheating. remove the dish when butter is melted.
Shred 2 uncooked sweet potatoes. Measure out two cups of the shredded sweet potato. Beat 2 eggs. Mix in 2 cups of sweet potatoes, eggs, milk, spices, sugar and salt. After it is all mixed. Dump and spread into dish. Bake for 1 hour. Half way through, stir. do NOT cover. Mazie's orders.
